Thanksgiving is already upon us. Can you believe it? I’ve been trying to wrap my mind around the fact that the year 2020 is almost over. It has been a tough year, but I’m determined to make it as fun as possible and not let anything steal my joy in this season.
If you’re stuck at home not been able to visit your family or vice versa, know that you’re not alone. Let’s set the table and make this fun. Since this year’s festivities were going to be small, I’ve decided to do a couple of cornish hen, and add a couple of Togolese staples. There can’t be no real Togolese/African party without a proper jollof. Another one of my favorite is the potato salad that is commonly called macedoine. I’ve decided to share the recipes with you, so scroll down and I hope you enjoy. I’ll probably start a Youtube channel to share my recipes at some points (stay tuned for that).
Recipe for Togolese Jollof:
Jollof rice is a Senegalese dish that most countries on the West Coast of Africa have adopted and that traveled all across the world through the African diaspora. This is a dish I grew up eating and that you can find on the table during celebrations.
-2 cups of rice
-3 cups of water or broth
-2 fresh tomatoes
-1 scotch bonnet pepper
-1 red bell pepper
-1 tbsp of tomato paste
-1 vegetable bouillon or cube
Start by blending tomatoes, scotch bonnet pepper, bell pepper and onion and reserve to the side.
Add the oil to the pan and turn the stove on.
Add diced onions to the oil and stir until they cook
Add the tomato paste (add a little bit of water so it does not burn)
After stirring for 5 mins, add some seasoning and continue cooking
Add the mixture that was blended earlier
Let it cook until the fresh taste of the tomatoes dissipates.
add vegetable bouillon or cube
Add previously washed rice. fold it in the tomato mixture
Add the vegetable broth or simply water
Let it boil first and then put in in the oven to finish cooking.
Once the rice absorbs the sauce and is soft, it is ready to serve. Add a little water if the rice is still hard at the taste.
Potato salad Recipe:
-2 big potatoes
-1 small pack of peas and carrots mix
-1 Parsley for decoration
-1/2 green bell pepper
-1 cucumber diced in cube
-1 tomato diced in cube
-1 quarter of an onion diced in cube
-1 chicken sausage cut in cube
-2 eggs boiled and cut in cubes
Cut the potatoes in cubes and boil until soft but not mushy.
Boil the peas and carrots
Boil the eggs and cut in cubes
Add all the ingredients in a bowl and add the mayonnaise, mustard, oil, salt and pepper and mix together.
Sprinkle some parsley on top and voila!
